Holiday Recipe Wednesday

Happy Wednesday! If you are new to Holiday Recipe Wednesday, then you have been missing out. During the holidays, we will be posting a recipe every Wednesday that is heart healthy and tasty. We want to help you save time and precious calories, so for today's mouth watering recipe - Turkey with Barley Cranberry Stuffing. Bon Appétit and happy cooking!
 


 Turkey With Barley-Cranberry Stuffing

2 c. reduced sodium chicken broth
1⁄2 tsp. rubbed sage
1 c. uncooked quick-cooking barley
1⁄2 tsp. garlic-pepper seasoning
1⁄2 c. chopped onion
1⁄2 c. dried cranberries
1⁄3 c. finely chopped parsley
2 Tbsp. slivered almonds, toasted
1 fresh or thawed frozen bone-in turkey breast half
(about 2 lbs.), skinned

 
Directions: Combine broth, barley, onion, cranberries,
almonds, sage and garlic-pepper in slow cooker.
Spray large skillet with nonstick cooking spray. Heat
over medium heat until hot. Brown turkey; add to
slow cooker. Cover and cook on low heat 4 to 6 hours.
Transfer turkey to cutting board; cover and let stand
15 minutes. Stir parsley into sauce mixture in slow
cooker. Serve sliced turkey with sauce and stuffing.
 

Makes 6 servings.

fat, 1 g saturated fat, 30 g protein, 33 g carbohydrates,
55 mg cholesterol, 6 g fiber, 114 mg sodium.
